<p>Tritare il prosciutto, la salvia, il rosmarino aggiungere l&#8217;uovo il cognac. Farcire il pollo con il composto preparato, cucirne l&#8217;apertura salare pepare e disporla in una teglia e cuocere in forno caldo per circa 1 ora. Durante la cottura cospargere il pollo con il sughetto che si forma nel recipiente.</p>

<p><strong>Esecuzione</strong>:</p>
<p>Lavare le canocchie, incidire il dorso nel senso della lunghezza. Mettere in una terrina il cerfoglio tritato, il pangrattato un pò di olio, sale e pepe. Mescolare il tutto sino ad ottenere un impasto omogeneo. Riempire ora le canocchie con la farcia nel taglio operato precedentemente. Mettere nella padella l&#8217;olio rimasto l&#8217;aglio e le canocchie, aggiungere  sale, pepe e cospargere di pangrattato e cuocere a  fiamma medio alta. Girare le canocchie e bagnarle con il vino  fino a far restringere il condimento.</p>

<p>Far lessare le carote in acqua salata, a metà cottura toglierle e tagliarle a  fettine.</p>
<p>Mettere a scaldare  in una padella, olio, l&#8217;aglio a fettine, aggiungere le carote la salvia  un pò di vino bianco ed un po&#8217; si sale.</p>
<p>A cottura ultimata aggiungere prezzemolo.</p>

<p><strong>Esecuzione:</strong></p>
<p>Mettere l&#8217;uvetta in ammollo nel succo di limone. Tagliare a dadini i pomodorini,il peperoncino e raccogliere il tutto in una ciotola insieme con il trito di aglio e basilico, l&#8217; olio, l&#8217;uvetta con il succo di limone e sale.</p>
<p>Preparare nella pirofila intanto uno strato di sale, mettere l&#8217;orata pulita, coprire con il resto del sale e infornare a 200 ° c per circa 30 minuti.</p>
<p>Servire il pesce liberato del sale e dalle lische con la salsina fredda.</p>

<li>1 pollo</li>
<li>2 bicchieri di vino bianco</li>
<li> brodo di dado</li>
<li> prezzemolo, aglio, burro, noce moscata</li>
<li> 1 cipolla, sale, pepe, limone, un pò di farina bianca.<span id="more-22"></span></li>

<p><strong>Esecuzione</strong>:</p>
<p>Tagliare il pollo a pezzi infarinare e farli rosolare in olio, burro e aglio, salare, pepare spolverizzare il tutto con noce moscata. Quando i pezzi di pollo sono ben rosolati aggiungere la cipolla tritata finissima, lasciarla appassire un momento e aggiungere il vino ed il brodo a coprire la preparazione.</p>
<p>Far cuocere per circa 1 ora. Prima di togliere dal fuoco aggiungere il prezzemolo tritato ed il succo di 1/2 limone e tenere sul fuoco per 2-3 minuti.</p>

Prendere una tegame sciogliere il burro e far saltare velocemente il coniglio, quando ha preso colore, aggiungere la cipolla tritata sottilmente e far cuocere dolcemente per circa 20 minuti, aggiungere ora il succo del limone e diluirlo con una cucchiaiata di acqua. A cottura ultimata aggiungere un pizzico di prezzemolo tritato.</p>

Aggiungere le cipolline, pepare e aggiungere le bacche  di ginepro.  Far prendere colore alle cipolline, aggiungere 1 cucchiaio di zucchero, e far caramellare.  Mettere ora  l&#8217;aceto e farlo evaporare coprire le cipolline di brodo e terminare la cottura.</p>

Tagliare lo scalogno sottile e farlo andare con un po&#8217; di burro e olio, aggiungere le capesante tagliate sottilmente e bagnare con il vino bianco. Unire ora le patate e sedano amalgamando il tutto. Ora prendere le conchiglie, mettere in ognuna un poco del contenuto e coprire con pane e parmigiano gratuggiatoe passare in forno a gratinare.</p>
